Yes Flo, but my gf did 80% of work. I worked at the wood oven. It was not hot enough and it took 15-20 minutes to cook a pizza, so it was not good. If you want a good pizza, oven must be very hot and it must cook in 2-3 minutes ;)

I knew it was your fault :lol: kidding :^^:

You can try to make high-hydration pizza with lower temperatures e.g. 250-350
degrees. From 400 and up it's Neapolitan. For me, lower than 250 is not pizza :D
I guess you didn't have the right temperature, like in my oven. I throw the pan at
the bottom of the oven for 4-6 minutes to speed up the cooking. Then at the middle
or top for 4-7 minutes. Same at my friend's oven. His oven is new and cooks better
than my gas one. You have to master your oven.

My mother used to make pizzas that cooked in 45 minutes. She mixed the ingredients
with eggs and poured the mix over after the dough cooked with a bit of sauce. It was
still better than anything I can buy from town. I remember her first pizzas was with bread
dipped in milk, then topped and cooked. It came out really crispy.

My wood oven is old, Flo, and it's outside my house...there's not a thermometer :(
the oven I have in my kitchen has a thermometer (obviously) but it's an electric one :)
We used the wood oven because it's the best to cook pizza (and not only). The problem is one: it's the best if you're able to use it :lol:

Sometimes (but very very rarely) we use it to cook lasagne (my mom makes it), or chicken, potatoes and, at Easter, lamb.
When I was a kid my grandma used it more often ;)
