Recipe by Paul Bocuse
Ingredients:
100 g melted butter,500 g flour,
2 sachets of vanilla sugar or a vanilla pod,1 pinch of salt,6 eggs,1 Lt of milk , 2 tablespoons of rum
Préparation
Mix the flour with the sugar and salt.
Add the eggs and mix.
Pour the milk little by little without stopping to beat to avoid lumps.
Finally, pour the melted butter and rum.
Let stand covered with a clean cloth for 30 min/1 hour.
Cook and savor immediately. Or reserve a few for the next day, they are still very good!

If this was your recipe, I wouldn't use it... but since it's from Mr. Bocuse, I will...
just joking
My standard recipe is: 100g flour, 350g/ml milk, 1 egg, 1 tbsp sugar. I just multiply this recipe when I need to make more and adjust butter, salt + vanilla depending on the quantity. My crepes are very tender... so tender that you can make bikini out of them
EDIT: yes, farm eggs and they are a yellow Farm eggs are cheaper than a brick of butter.
