Tried a round one and a teglia tonight :) This was a 75% hydration and it was
a bit too chewy, again. So perfection is only on the edge ;)

The teglia result is spectacular since I keep decreasing the amount of dough.
430g of flour, 323g water, 11g sea salt, 3g yeast with 25 hours total rest, about
22 in the fridge.

Just before the fridge... Total weight is 760g, but it will be divided after going out
of the fridge.



A photo of them together. Crispy, open, but chewy... when you bite you want
it to disappear :surprised:



Pretty much close to perfect crumb :P
